
You can make knäck the long or short way, either by heating on the hob, or in the microwave. One thing is to make sure your microwave dish can handle hot melting sugar – we realised this the hard way!
What you’ll need
- tiny paper cups, search for Knäckformar
- 100ml vegan alternative cream
- 100ml golden syrup
- 100g sugar
Optional
- finely chopped almonds
- sea salt flakes
- finely chopped hard mints
Process
Lay out the paper cups on a baking tray, add chopped almonds, salt or mints to the bottom of the cups. You can also add that at the end, on top of the knäck.
Add the cream, golden syrup and sugar into a microwavable jug. Make sure the jug is large enough that the mixture won’t overflow when it’s bubbling.
Put in the microwave on full power for 7 minutes.
You can do the spoon test – take some on a spoon, put that in a mug of cold water. If you can then roll it into a ball, it’s ready.
If it’s not ready, put into the microwave for more time.
When it’s ready, pour the mixture into the paper cups.
Optional: add almonds, salt flakes or mint to the top before it sets.
Leave to set, you can then store in the fridge and enjoy during the cold winter nights.
